My Trusty Guacamole (basically a Chipotle copycat recipe)

Hi everyone, it’s been a while! I took last week off in light of everything going on in the world (Black Lives Matter!!!) to use my time normally spent on IG to amplify black creators’ voices and begin my journey of learning/unlearning. I’m back now with some regular content but will be working more on this as well, of course. Now onto the food --

Do you ever go on the Chipotle website and use the nutrition calculator for fun? I like to see how many calories I can make a meal that I would actually eat. It’s usually well over 1000.

Then I calculate what I actually order from Chipotle and even my usual salad is over 1000 calories. Well, ok, I’m not being honest...my meal is always over 1000 because I never order Chipotle without also getting chips and guac. I <3 guac.

When I have ripe avocados in my fridge or on my counter, I like to make my own super limey guacamole!!! It’s just like Chipotle’s except better because it’s fresh and customizable, and you can take your time prepping every ingredient perfectly (there’s nothing worse than chomping down on a huge chunk of onion or jalapeno in your Chipotle guac).

Serves 4-6 or 1 super hungry person with no regrets

Ingredients:

2 ripe Avocados

½ small red onion, diced

1 lime

¼ cup chopped cilantro leaves

½ jalapeno, diced

Salt & pepper to taste

Instructions:

Peel your avocados and throw ‘em in a bowl, squeeze the lime juice over top and mash it all together with a fork. Add ½ diced red onion, ½ diced jalapeno, and ¼ cup chopped cilantro and mix it up till it’s ultra creamy with a few chunks. Add salt & pepper to taste then mix well again before dipping all the chips in there!

Notes:

  • I love lime which is why you’ll see I put a whole lime in there! You can add half the lime and taste test before you decide to add the other half

  • I let my avocados get ripe on the counter then I store them in the fridge! They actually do last long this way.

  • If you have extra diced onion and jalapeno, you can stick them in a Stasher bag, freezer bag, etc and freeze them. Just make sure you thaw them before use!

  • I don’t typically use cilantro stems in my guacamole but you can save them for a lil chimichurri action later on if you’re looking for something to do with them.
