Sweet Potato Black Bean Fajitas

Since I’m now working mostly from home (except when I’m driving around showing houses, please reach out if you want to buy or sell a house in NJ :) ), I focus less on ‘meal prep’ and more on ‘meal repurposing.’ That might mean making a pot of rice for the whole week and keeping other ingredients on hand to make several meals, or planning my dinner around the can of beans I opened yesterday for lunch.

Luckily, these Sweet Potato Black Bean Fajitas are perfect for repurposing. I roasted sweet potatoes to have as snacks & breakfast but used some in this recipe, I now have ½  a can of black beans I can use however I please (maybe black bean burgers?), and while this mixture worked great as tacos today, I think tomorrow it’ll be perfect on a salad.

(Makes About 8 Tacos)

Ingredients:

1 tbsp neutral oil (like avocado)

1 sweet potato, roasted (I used a white one, but an orange yam will work!)

2 bell peppers of your choice

½ medium sized yellow onion

½ can of black beans, drained and rinsed

(at least) 2 TBSP of a chile lime seasoning, I use this one from Savory Spice Shop

Directions:

In a large skillet, heat your neutral oil and dump in your peppers & onions. Saute until the veggies begin to sweat a little. Season with salt. Add in chile lime seasoning and saute until combined. Add ¼ cup of water and cover, stirring periodically for 5-10 min until veggies are soft.

Dice your leftover roasted sweet potato and add to the skillet, along with ½ cup of black beans. Stir and cook until heated through. You may want to add more water here if the mixture is looking dry!

For tacos: char your tortillas over the stove on medium-high flame. Add any toppings you desire, including cheese, salsa, avocado, etc!

*Here are the ingredients in the spice mix I use, in case you want to make your own: Cumin, salt, mild chili powder, annatto, turmeric, aji amarillo chiles, makrut lime leaves, Mexican oregano, cilantro
