The Easiest Dairy Free Pesto Tuna Salad

Before this pandemic, I was the type of person who was always on the go, which means I needed fast food. During the pandemic, I planned for some more pantry friendly meals that I could put together between conference calls, like one of my pre-pandemic favorites, the easiest Dairy Free Pesto Tuna Salad. Completely versatile based on your needs or pantry, feel free to switch up the ingredients to work for you.

*Makes 2-3 Servings

1 can Tuna in Oil

1-2 heaping tbsp Trader Joe’s Vegan Kale Cashew Pesto (or pesto of choice)

4-5 chopped marinated artichokes

2-3 diced stalks of celery

Salt & Pepper to taste

I serve mine over mixed greens, spinach, or other lettuce with a drizzle of olive oil (and sometimes red wine vinegar), salt, & pepper. I always, always eat it with a side of Simple Mills Almond Flour Crackers, but I suppose any crackers will do!
