Banana Split Cookies

Sometimes inspiration strikes at random times. Usually I see something and I want to recreate it or make something similar, but in this case, I think it has been my recent propensity for strawberry ice cream that inspired these cookies. 


I’ve never actually had a banana split, but I imagine these cookies would do the trick if you had a spare 30 min and no ice cream in the fridge.

Ingredients:

1 cup oat flour

1 cup almond flour

¼ cup brown sugar

1 tsp baking powder

1 tsp salt

1 ripe banana

3 tbsp cashew butter

1 egg

1 tsp vanilla

½ cup chopped walnuts

Sliced strawberries

Drizzle of melted chocolate (chocolate chips and a tsp of coconut oil)


Instructions:

Whisk to combine oat flour, almond flour, brown sugar, baking powder, and salt. In a separate bowl mash 1 banana and add cashew butter, egg, and vanilla. Combine the wet and dry ingredients and mix well. Add in chopped walnuts.

Scoop dough with a tablespoon and form into balls. Flatten balls and press in sliced strawberries.

Chill in the fridge for at least 10 min after forming. Bake for approximately 12-15 min at 350 degrees.

While the cookies cool, melt chocolate chips (a quarter cup or so should be fine) and 1 tsp coconut oil in the microwave, stirring frequently. The tip to melting chocolate in the microwave is stirring to evenly distribute the heat! You may see lots of large chunks but probably do not need to put it in the microwave any longer, just keep stirring!

Drizzle chocolate over the cookies with a spoon or fork. Stick in the fridge to set and enjoy!

Notes:

  • For best results, eat from the fridge or freezer like a cold banana split!
