Chewy Nutella Hazelnut Cookies

Helloooooo it’s been quite a while! I have been trying to enjoy these last (omg) few weeks of summer, and haven’t exactly been putting cooking or baking first! In addition to being outside as much as possible, I have also been studying for my Real Estate exam (I’m now licensed in NJ, so hit me up for any home needs), and working hard at my new job.

I do still have time for you, my lovely food blog. Sometimes inspiration hits and I can’t help but whip something up (even when nobody has asked). We have had a bag of hazelnut meal sitting in the freezer for...who even knows how long? I decided to put it to good use with these Nutella cookies!

You’ll probably eat about 6 of these super chewy cookies before realizing “oh I just ate 6 cookies.” They’re super delicious and go GREAT with some vanilla ice cream.

Ingredients:

4 tbsp butter

¼ cup sugar

2 tbsp brown sugar

2 eggs

1/4 cup Nutella or chocolate hazelnut spread (I like the one from Shop Rite)

Dash of vanilla

1 cup hazelnut meal

1 cup almond flour

1 tsp baking powder

1 cup semisweet or dark chocolate chips

Instructions: 

Preheat the oven to 350 degrees fahrenheit.

Cream together butter and sugars with a stand mixer or handheld mixer. Add in eggs and vanilla and mix until combined. Stream in the chocolate hazelnut spread until mixed well. Slowly add both flours and baking powder. Fold in chocolate chips. Use a tablespoon to scoop onto a cookie tray.

Chill the tray (or trays) in the fridge for at least 30 min to firm up. Bake for 12-15 min.

Notes:

  • These are thin, chewy cookies that are best stored in the fridge with some parchment paper between. Otherwise, they will stick together! Wait for them to cool completely before serving on a plate.
