Your New Favorite Summer Salad
You know something is really good when you make it over and over and over and over again. Seriously, as I was drafting this post my mom asked me if I could make it with dinner.
I originally threw together this summer salad a few days ago when my family decided to make a pot roast for dinner that wouldn’t be ready until 9:30pm (I was not part of that decision).
So while we sat on our gorgeous roof deck and admired the views, we had this salad as an appetizer, and it’s been on repeat ever since. It’s also perfect for Jersey tomato season!!!
Ingredients:
1 English cucumber
1-2 tomatoes
½ red onion
1 block feta cheese (I use Dodoni brand)
1 avocado
Dressing:
¼ cup olive oil
1 tbsp dried oregano
Salt & pepper to taste
Fresh chopped basil to garnish
Cut your cucumber into quarters and chop into ½ inch wide or smaller pieces. Dice your tomato(s). Chop or shave red onion on a mandolin. Dice feta cheese into small cubes. Pit and peel your avocado and dice. Mix everything together and add olive oil, dried oregano, salt & pepper. Mix again and add your fresh chopped basil (don’t be afraid to add too much, you definitely can’t add too much).
